Introduction
this was supposed to be lentil soup, but I got a little crazy with the legumes... this was supposed to be lentil soup, but I got a little crazy with the legumes...Number of Servings: 10
Ingredients

mix
3 c lentils,
1 lb can of garbanzo beans (chick peas),
6 oz can of kidney beans,
1 pint jar of canned tomatoes, 1
1 diced onion,
garlic to taste,
about 1/3 cup lemon juice,
salt to taste
water as needed
spices as desired
Add enough water to cover the beans. you may need to add a little more water as it cooks, depending on how "thirsty" your beans are. get creative with your spices - this dish goes well with italian, Mediterranian, indian, or cajun... and that's just what I've tried!

This is a crock-pot recipe! Excess soup freezes well :)
Makes 10 hearty 2c servings, with only 155 calories!
this recipe makes 5 quarts, but can be adjusted for larger or smaller pots, or for the stove-top.
Mix all ingredients in the crock pot. Add enough water to cover the beans. you may need to add a little more water as it cooks. put on "low" for 4 hours. at the four hour mark, taste test and add more spices and water as needed, and leave in the pot long enough to heat any added water.
This is a really simple recipe, and very tasty, too!
