Ingredients

    1 C. Margarine, softened
    1 C. packed Brown Sugar
    1 C. Granulated Sugar
    1 C. Dole Pineapple Tidbits 100% Pineapple juice
    2 large Eggs
    4 C. AP Flour
    1/2 tsp. Salt
    1 tsp. Baking Soda
    1 tsp. Vanilla Extract
    7 oz (1 bag Baker's) Coconut, sweetened

Directions

Pre-heat oven to 350 degrees F.
In a mixer, blend margarine, both sugars, and eggs. Beat until creamy.
Add pineapple, including juice, baking soda, salt, and vanilla.
Beat until smooth, add coconut.
Blend in flour in increments. If it gets too stiff for the mixer, mix the batter by hand.
drop a spoonful onto a greased cookie sheet.
Bake for 12-15 minutes or until golden brown.
