    -8OZ LIGHT MILD ITALIAN SAUSAGE
    -1 CUP DICED ZUCCHINI
    -1/2 CUP MINCED ONION
    -1/2 CUP DICED RED PEPPER
    -1 CUP PACKED LIGHT OLD SHARP CHEDDAR CHEESE
    -2 CUPS FAT FREE EGG SUBSTITUTE
    -1 CUP EVAPORATED 2% MILK OR LIGHT 5%CREAM
    -1/4 TSP SALT AND PEPPER

Directions

-SPRAY AN11X7'' CASSEROLE DISH WITH COOKING SPRAY. SPREAD CROUTONS EVENLY OVER BOTTOM OF DISH. SET ASIDE.

-SPRAY A MEDIUM, NON STICK SKILLET WITH COOKING SPRAY. REMOVE AND DISCARD CASING FROM SAUSAGE. BREAK OR CUT SAUSAGE INTO PIECES AN ADD TO SKILLET. COOK OVER MEDIUM- HIGH HEAT UNTIL NO LONGER PINK, BREAKING UP ANY LARGER PIECES. ADD ZUCCHINI, ONIONS, AND RED PEPPER. REDUCE HEAT TO MEDIUM. COOK AND STIR FOR 3 MINUTES, UNTIL VEGGIES SOFTEN.

-TO ASSEMBLE STRATA, SPOON SAUSAGE MIXTURE OVER CROUTONS. TOP WITH SHREDDED CHEESE. WHISK TOGETHER EGG SUBSTITUTE, MILK, SALT, AND PEPPER IN A MEDIUM BOWL. POUR OVER SAUSAGE MIXTUREAND VEGGIES AND LET STAND 10-15 MINUTES. PREHEAT OVEN TO 350F.

-BAKE UNCOVERED FOR 40 MINUTES, UNTIL EGGS ARE COMPLETELY SET. LET STAND 5MINUTES BEFORE CUTTING.
