Ingredients

1 tube of ground turkey sausage (15 oz.)
1 tsp poultry seasoning
4 slices of bread (or enough to total 4 1/2 C)
8 ounces of weight watchers mexican cheese
1 tsp. mustard powder
2 large eggs
4 egg whites
2 C. 1% milk
non-stick cooking spray
Directions
Brown sausage in a nonstick skillet - break up into bite size pieces. Cook over medium heat until brown. Sprinkle poultry seasoning over sausage - stir in. Spray a 9x13 baking dish with non-stick spray.
Put the sausage into a large mixing bowl. Toast the bread and break apart. Add the sausage, toast, cheese and mustard powder - stir.
In a seperate bowl mix the whole eggs and egg whites. Mix with a whisk until blended together. Pour over the sausage mixture and stir to blend together. Spread into the 9 x 13 baking pan, spread evenly. Cover with foil and refrigerate overnight.
Preheat oven to 350 and bake, covered in foil, for 45 minutes. Remove foil and reduce temperature to 325 for another 20 minutes or until the moisture on top is gone.
