Ingredients

    1 large head cauliflower, chopped into 1" pieces
    2 tbsp mascarpone cheese (or cream cheese)
    2 cloves of garlic, coarsely chopped
    6 tbsp grated parmigiano reggiano cheese
    1 cup chicken broth

Directions

Bring cauliflower and garlic cloves to a boil in chicken broth (with 1-2 cups water added to cover contents). Turn down heat and simmer for 35 minutes. Strain. Return cauliflower to pot and puree with a hand blender until smooth. Blend in mascarpone and parmesan. Salt and pepper to taste.

Makes 2-3 cups
