Introduction

Ingredients

    2 cups uncooked Minute Rice
    1 lb Jenny-O's 93% lean ground turkey
    1 package Old El Paso Taco Seasoning
    1/2 cup Hormel Bacon Bits
    1 cup low sodium salsa
    (I use Italian Rose Fresh Salsa from Sam's Club)
    1 Green pepper Diced
    4 Tbsp chopped onion
    1/4 cup diced celery

Directions

Prepare rice per instructions
(2 cups should make 3 cups cooked).
Brown Turkey and as cooking add in vegetables
(to avoid using oil or spray or butter)
Once brown add taco seasoning and 2/3 cup water.
Cook until well mixed and add to rice.
Stir in salsa, bacon bits.
Heat until warmed through.

Makes about 8 - 3/4 cup servings.
