Introduction
A variation on the Oven-'Fried' Chicken recipe from Eat, Shrink and Be Merry! A variation on the Oven-'Fried' Chicken recipe from Eat, Shrink and Be Merry!Number of Servings: 10
Ingredients
-
2/3 cup whole-wheat flour
1 large egg
1/2 cup of 1% milk
1 tsp onion powder
1.5 cups Kellog's All-Bran Bran Flakes
2 tbsp grated parmesan
10 drumsticks, skin removed.
Directions
Prep the drumsticks by running them under cool water and peeling back the skin, finishing by trimming the skin around the bone 'handle'.
In a large bowl, combine egg, parmesan, onion powder and milk, and whisk until combined. You can crunch up the cereal in a plastic bag to the desired consistency that you want your coating; I like mine nice and crunchy!
Dip each drumstick first into your flour and secondly into the milk mixture. Roll the coated drumstick in the bran flakes until thoroughly covered and set aside.
When all drumsticks are covered, place in the pan and heat until the chicken is cooked through, and evenly browned on both sides. Serve immediately and enjoy!
My family was each served two pieces, but some only wanted one piece, so serving size is one piece for easier calorie calculation depending on how many pieces one person prefers.
