Ingredients

    2 teaspoons olive oil
    Onion, optional
    6 cups (1 bunch) Swiss Chard, stems and leaves separated and sliced
    2 cups canned diced tomatoes with juice
    8 ounces salmon
    salt and pepper

Directions

Season salmon with salt and pepper.
Broil salmon; reserve.
Sauté onion and chard stems in oil; add tomatoes and simmer.
Add chard and wilt.
Finish with a splash of sherry or balsamic vinegar
Top with salmon.
