Ingredients

1 cup liquid egg substitute, like Egg Beaters
3 slices lean deli ham
1 medium red potato
1/8 cup shredded fat-free mozzarella
2 tbsp parmesan
salt, pepper, season to taste
Directions
Serving size: 1/3 of frittata
Preheat the broiler.
Grate red potato on box grater using the teardrop side.
Roll up ham slices and slice thinly.
Spray medium size frying pan with non-stick cooking spray. Heat over medium high. Spread grated potato evenly over bottom of pan. Salt, pepper & season potato. Brown for 2-4 minutes, then flip or mix.
Salt, pepper & season egg substitute. Add ham to pan. Pour egg mixture evenly on top. Reduce heat to medium, and let cook without stirring until liquidy just on top, about 5 minutes.
Sprinkle cheeses on top, set to brown in the broiler, 5-10 minutes depending, until cooked through and golden on top.
