Introduction
Here is a quick and easy dinner idea my sister created. I made it a little more healthy by cutting down the amount of butter and substituting brown rice. Ingredients

4 c, brown rice, cooked
1/2 lb, precooked shrimp
1 c, carrots, chopped
2 bunches, broccoli florets
1 pkg, fresh sugar snap peas
2 fresh zucchini, sliced
4 Tbl, butter
1 tsp, Lemon Pepper
pinch of salt
1/4 c, white wine (for flavor--this is optional--nutritional info includes it)
1/2 lemon
Directions
Cook rice using your favorite method (boil-in-bag, saucepan, rice cooker).
While rice is cooking, place butter in large pan on med heat to melt. Once butter is halfway melted add veggies. Cook for 3-4 min. Veggies should be slightly crunchy.
Add shrimp, lemon pepper, salt and wine to veggie mix. Cook for 3-4 more min or until shrimp is heated through.
Place rice into 4 individual bowls. Scoop shrimp and veggie mixture on top of rice. Squeeze a little lemon juice in each bowl. Serve with lemon wedges.

Good catch--I just edited it to reflect the correct amount of rice, 4 cups. The shrip is correct at 8oz--8oz=1/2 lb. Thanks for the comment!
