Ingredients

1-1/4 c eggbeaters
8 oz Cabot's Seriously Sharp cheddar cheese, grated
8 oz Cabot 1% sharp cheddar cheese, grated
3 c buttermilk
1 t salt
1/2 t pepper
7 oz elbow macaroni (measured dry), cooked and drained (I use whole wheat pasta)
Directions
In a large bowl, stir together the eggs, buttermilk, salt, pepper, and then cheese. Add macaroni; stir well. Pour into greased 9x13 pan.
Bake uncovered at 350 for 45-50 minutes.
Serving size is approx 1/2 cup.
