Ingredients

3/4 cup black beans, canned, low-sodium
2 teaspoons olive oil, extra virgin
3 tablespoons sour cream, fat-free
3 tablespoons salsa
1 tablespoon green onion, chopped
1 dry cup lettuce, shredded
2 ounces cheddar cheese, low-fat
4 slices jalapeño
Chopped cilantro
1 oz tortilla chips
Directions
Mash black beans and olive oil with a fork or potato masher.
Spread beans across a shallow dish or container.
Spread sour cream over beans.
Spread salsa evenly over sour cream.
Wash green onion and lettuce. Chop onion finely and shred lettuce.
Layer onion over sour cream.
Layer lettuce over green onion.
Layer cheese over lettuce.
Layer jalapeño (chopped) over cheese.
Sprinkle with cilantro and serve with chips.
