Ingredients

    100g salmon
    1 tbsp olive oil
    2 tbsp barbeque sauce
    1 small sweet potatoe
    2 tsp honey
    1 clove garlic, crushed
    2 handfuls chopped kale

Directions

Taken from Zest Magazine-can replace fish with Tofu for a vegetarian version.

1) Cook the salmon until done in halfthe olive oil
2) Take half the BBQ sauce and toss the fish in it
3) Pierce the potatoe a few times and Microwave for 8-10 mins
4) Cut potato in half and top with honey
5) Add remaining half oil to the pan, and saute the crushed garlic, kale and remaining BBQ sauce for about 5 mins
6) Serve with the fish and sweet potato
