Ingredients

    1/4 sweet onion, sliced
    1 sweet red pepper, sliced
    2 baby zucchini, julienned
    6 oz steak (or chicken breast), sliced thinly
    1 t cumin
    1 t dried, powdered chipotle
    1/2 cup roughly chopped cilantro, leaves and stems
    juice of one lime

Directions

Saute vegetables in a stick proof pan, sprayed with Pam.
As veggies soften, add steak, cook to pink.
Add lime juice and herbs and spices, saute for about a minute more, then turn off and leave on burner for couple minutes.
Wrap with tortillas
