Ingredients

    1 15.5 oz can cannellini beans, drained
    1 14.5 oz can diced tomatoes in juice, drained but reserve 2 Tbsp juice
    1/2 cup diced extra lean ham (ham steak works well)
    1/2 cup diced sweet onion
    1 Tbsp EVOO
    2 cloves garlic, minced
    1 tsp sage, chopped if fresh or 1/2 tsp dried sage
    1/2 tsp Black Pepper
    1/2 tsp red pepper flakes (optional)
    3 Tbsp Parmesan cheese, fresh grated (optional)

Directions

Dice the ham and onions. Drain the beans and the tomatoes, being sure to reserve 2 Tbsp liquid from the tomatoes.
Preheat a deep skillet and add 1 Tbsp olive oil. Add the ham and onions, and sautee on medium heat. Add the garlic and stir well, sauteeing over medium heat unitl onions are translucent.
After onions are translucent, add beans, tomatoes and reserved juice, mix well. Add pepper, sage, and mix well. Allow mixture to simmer for 10 minutes, stirring occasionally, unitl liquid thickens.
Add red pepper and/or parmesan cheese just before serving, being sure to mix well.

Makes 4 1/2 cup servings

    Very Good
    Very tasty! (be warned, if you accidentally use diced tomatoes with green chiles, it will be very spicy) If you can afford the calories, this would be awesome on top of or with cornbread. - 4/20/13
