Introduction
This chicken is PACKED with flavor but leaves you with zero guilt! This chicken is PACKED with flavor but leaves you with zero guilt!Number of Servings: 4
Ingredients
-
1 pound of boneless skinnless chicken cut into strips
Bottle of Wish Bone Bountifuls Tuscan Salad Dressing (you may use other salad dressing, but this is FULL of awesome flavor and veggies with very little calories and fat!)
Bread crumbs (seasoned or non) .5 cup or more depending on your taste
Reduced Fat Feta Cheese 1.5 oz
Directions
Preheat oven to 385
Cut the chicken into strips and marinate in dressing for about 15-30 min. in the same dish you will bake the chicken in.
While marinating:
Mix the feta and bread crumbs in a bowl (smash up the cheese so there aren't many big clumps. by coating the cheese with the bread crumbs the smaller clumps will maintain their shaper and you will taste the cheese better)
Do not discard the dressing! Simply cover the top of the chicken with the bread crumbs and bake for about 25 minutes.
Note: the bread crumbs will dry out along the edges of the dish, but the middle crumbs will stay moist. This is the best way I have found to allow the chicken to remain moist but still enjoy the idea of breading.
I usually pair with a small salad and a rice dish.
