Introduction

These are a wonderful side dish to compliment any meal. They are crispy on the outside and soft and moist on the inside. I use onion powder because I don't like the texture of real onion. Also I use dried herbs. These are a wonderful side dish to compliment any meal. They are crispy on the outside and soft and moist on the inside. Ingredients

    1/2 lb red potatoes
    1 tbsp olive oil
    1tsp olive oil
    1tsp fresh garlic (finely minced)
    1tsp oregano
    1tsp basil
    1tsp rosemary
    1tsp onion powder
    1tsp salt
    1tsp black pepper


Directions

Pre-Heat your oven to 375 deg. Place potatoes into 6cups of boiling water. Boil potatoes for 15 minutes. Drain and let cool. Add the 1 tsp of olive oil to a small frying pan and add your minced garlic. Cook until garlic is tender and golden.
Once cool enough to handle cut the potatoes into 2 in cubes. Place potato cubes into a small baking dish, and add 1 tbsp olive oil, oregano,basil,rosemary,salt, pepper, onion powder, and black pepper. Try to spread the ingredients across all the potatoes. Add the garlic and toss with a spoon.
When all of the potatoes are coated, use the spoon to spread them evenly across the bottom of the baking dish. Place into 375 deg oven for 15-20 minutes. After 20 minutes flip the potatoes and replace in oven for 20 additional minutes. Potatoes should be golden brown on all sides. Let cool for 5-10 minutes, then serve.

    I'm going to try and cook the garlic with PAM to get rid of some of the olive oil. Sounds tasty, I will make it tonight - 2/21/09
