Ingredients

1 1/2 oz Thin Rice Noodles
1/4 Cup Fresh Spinach Leaves
4 TBSP Honey
1 TBSP Lime Juice
8 Rice Paper Wrappers (8 inches each)
4 Kiwi Fruit (peeled, sliced in half then lengthwise)
1/4 Cup Slivered Almonds
1/8 tsp Chili Powder
Directions
For Dipping Sauce:
1) Whisk 3 TBSP of the honey with lime juice, chili powder, and 1 TBSP of water.
For Wrappers:
1) Cook the rice noodles according to package directions and pat dry.
2) Toss noodles with the spinach and 1 TBSP of the honey in a medium bowl.
3) Soak each wrapper in a small bowl of warm water until softened (about 30 seconds).
4) Lay out each wrapper and add even amounts of kiwi, noodles, and almonds to the ends of each wrapper.
5) Fold ends and wrap tightly around filling and halve rolls.
Enjoy! (If storing - cover with a moist paper towel.)
