Introduction

Ingredients

    1 1/2 cups of Dry Black Eyed Peas
    Garlic Cloves (4 to 5, crushed)
    Chicken Broth (3 cans)
    Bacon (3 slices)
    1 cup chopped Onion
    1.2 cup chopped green peppers
    2 Bay leaves
    1 can of chopped tomatoes
    2 TBS Molasses
    8 cups water

Directions

1. Soak the Black eyed peas for 2 hours in 4 cups of water-- be sure to pour off the water 2 or 3 times and replace it with new hot water.
2. Cook the peas in the chicken broth for 45min to 1hr.
3. Add tomatoes, onion, peppers, garlic and all spices
(you might have to add water-- use your discretion)
4. Cook the bacon in a frying pan
5. Add the bacon
6. Stir-- let the flavors mix.
7. Cook for 5 minutes
8. Add the molasses
9. Mix-- cook for 5 more minutes

* This will take less time if you use a crock pot. I prefer to cook beans on the stove because I have found if you soak them and pour off the water a few times the beans will make you less gassy.

* You can also use the same amount of canned cook black eyed peas but they are far more salty. It will take less time though.

* You can also use other spices--paprika, chicken bouillon, a chopped hot pepper...
