    4 eggs
    4 egg whites
    1/8 cup rice milk (or regular milk)
    3-5 sprays of cooking spray
    1 medium artichoke already cooked and chopped up (or artichoke in oil- if not in oil, discount olive oil ingredient)
    1 cup green pepper
    1 scallion


Heat oven to 375 degrees. Spray large skillet with cooking spray and heat up.After separating egg whites from yolks, mix whites with 4 whole eggs and milk. Mix well. Add green peppers, artichoke and half of scallion. Pour in skillet and allow to cook, lifting edges of eggs to allow extra to run in. Once semi-solid, put skillet in oven and allow to cook until solid. If you like it well done, continue to cook until starting to brown on top. When done, remove from oven and garnish with the rest of the scallion.
