Introduction

This is an easy side that I use instead of Potatoes - lots more nutrients. This is an easy side that I use instead of Potatoes - lots more nutrients.
Number of Servings: 4

Ingredients

    1 cup rutabaga, cubed
    2 cups sweet potato
    1 cup carrot sticks
    2 onions, cut in wedges
    2 Tbsp olive oil
    1 Tbsp balsamic vinegar
    salt, pepper and dried thyme to taste.

Directions

Toss all ingredients in a bowl and spread on a baking sheet. Bake at 400 degrees for 30 - 45 minutes or until soft and browned.

Makes 4 1 cup servings.
