Ingredients

8 Slices of Toasted Whole Wheat Bread
1 can of very low sodium tuna
1 cup of no salt added cooked mushrooms
1T. reduced fat margarine
2T. flour (I used soy)
1/2 cup skim milk
24 steamed fresh (or frozen) asparagus spears
8 slices of reduced fat sliced cheese, pref american or cheddar
Directions
Makes 4, 2 slice servings
Melt the margarine over low heat and slowly whisk in the flour. Slowly whisk in the milk until completely combined with the flour mixture. Heat over low to medium heat until thickened. Add the mushrooms and tuna, heat through.
Place the toast on a lined or sprayed baking sheet. Spoon enough tuna sauce to cover the toast, layer 3 asparagus spears over this and top with a slice of cheese. Broil until the cheese melts.
I sometimes add light salt and pepper to the sauce b/c of the reduced sodium.
This is a wonderful, easy recipe that tastes delicious and is much healthier than the all-canned original made w/cream of mushroom soup.
