Introduction

Number of Servings: 8

Ingredients

    1 1/2 Cups dry rice, steamed with 3 cups of water
    2 cans kidney beans
    salt
    pepper
    butter (2 Tbs. if you're worried about calories, more if you want better taste)


Directions

After rice is cooked, toss together. If you want a better tasting dish, saute 1/2 and onion in a little olive oil with a chicken bullion cube. Mix with rice & beans and serve with grated cheese on top. When made with the extra additions, it's actually very tasty. (But I didn't add those ingredients into the nutritional calculator.)

    I make something similar to this all the time. I make sure to drain and rinse the beans to reduce the sodium content, and skip the salt and butter in the recipe. I add a quarter of a cup of home made salsa and the taste is wonderful! - 2/22/09
