Ingredients

    ~2 garlic cloves, minced
    ~1tsp canola oil
    ~1-pound (I only used 12oz) peeled, cooked shrimp
    ~salt and pepper to taste
    ~1 avacado, mashed
    ~2Tbsp minced shallot or onion
    ~1tsp diced chili pepper
    ~1 squeeze of lemon juice
    ~4 flour tortillas

Directions

Cook minced garlic cloves in canola oil until fragrant. Reserve 1 teaspoon garlic. To the remaining garlic still in the pan, add 1 pound of peeled shrimp; sprinkle with salt and pepper, and cook until no longer pink (about 3 minutes). Mash the avacado with 2 Tbsp minced shallot or onion and the reserved garlic; adding diced chili pepper, lemon juice, and salt and pepper to taste. Spread the guacamole evenly onto the flour tortillas and top with shrimp.
