Introduction

This is a quick prep salad that goes really well on White Cheddar Rice Cakes. Chopping every thing takes a few minutes but it is worth it. Ingredients

    Processed ham loaf - like Dubuque or Louis Rich 1 lb. Cube/dice as small as suits your taste and final use.
    3 tablespoons Light Mayonaise - I like Dukes but any good quality will do
    2 tablespoons roasted red peppers. A jar of these goes a long way in a lot of recipes. I always have one in the refrigerator.
    1/4 cup chopped/diced dill pickle

Directions

Chop everything to taste and then combine. Letting it sit overnight makes the tastes 'marry' and blend. Store leftovers in refrigerator.
