Introduction

Whenever I have left over chicken, I make Fajita's the next day for lunch. We love them. Whenever I have left over chicken, I make Fajita's the next day for lunch. We love them.

Ingredients

    1/2 Small Onion
    1/2 Red or Green Pepper
    6 ounces Cooked Chicken
    1 Carrot julienned (I use leftover cooked carrots)
    1 Tlb. Balsamic Vinegar
    1 Tlbs Olive Oil
    2 Flour Fajita Tortillas
    1/4 cup Kraft Shredded 2% Mexican Four Cheese blend

Directions

Julienne the chicken, carrots, onion and pepper. Place the onion and pepper into a fry pan with the olive oil and balsamic vinegar. If the carrot is raw, add to this mixture to cook slightly. Saute about 8 minutes or so depending on how soft or crisp you want the vegetables. Add the chicken to heat through.
Separate the onion mixture and cheese into two servings and place on top of the two Fajita's. Wrap into Fajita style and serve.
