Introduction

The other fritatta listed on this site was very good...but I wanted to reduce the calories. The other one was 462.8 calories....this one is over 80 calories less. Ingredients

    4 ounces light sausage, Sliced
    1 cups unpeeled Zucchini, Shredded with potato pealer
    1 scallion sliced
    1/2 tablespoon basil, minced
    1/2 teaspoon italian seasoning
    2 large eggs
    3 Tbls skim evaporated milk
    3 ounces 1/3 fat
    cream cheese, cut into 1/2 inch cubes
    1/2 cup shredded mozzarella cheese, 2%
    1/2 cup shredded sharp cheddar cheese , 2%

Directions


1. Preheat oven to 325F. Spray 8 inch pan with cooking spray
2. Brown sausage, drain and spread over bottom of pan
3. Top with zucchini, then scallions and seasoning
4. Whisk eggs and cream slightley, than pour over sausage mixture
5. Sprinkle cream cheese on top, then mozzerla and cheddar
6. Bake for 45 minutes or until knife inserted in the middle comes out clean.
7. Serve warm.
