    * Nutmeg, ground, .25 tsp
    * Apple sauce, unsweetened, 1 cup
    * Granulated Sugar, 1 cup
    * Brown Sugar, .75 cup, packed
    * Egg, fresh, 4 large
    * Vanilla Extract, 1 tsp
    * Crushed Pineapple, 8 fl oz
    * Pecans, 1 cup, chopped
    * Carrots, raw, 3 cup, grated


Directions

Preheat oven to 350

Combine ingredients and cook for 35 to 40 minutes

    Very Good
    This sounds really good, most carrot cake recipies call for a lot of oil. Do you think you could make it with whole wheat flour and Splenda - 3/24/09

    I think you could make it with the whole wheat flour for sure but as for the Splenda, I find it always leaves a strange after taste in my mouth.
