Introduction
These taste just like carrot muffins (without the carrot taste) Absolutely delicious, and was a hit with the whole family. If you want to sneak in a veggie, it's a yummy way to do it. Ingredients

3 eggs
1/2 cup of oil
1/2 cup of unsweetened applesauce
1 1/3 cup of sugar/Splenda
3 cups of zucchini, grated and drained (3 medium size zucchini should do it)
3 tsp vanilla extract
2 cups of flour
1 3/4 tsp of baking soda
2 tsp of cinnamon
.25 tsp of baking powder
Directions
1. Combine the first 5 ingredients in a mixing bowl.
2. In a separate bowl, mix the dry ingredients.
3. Combine both liquid and dry mixtures.
4. Pour into a muffin tin or a tart shell 3/4 full.
5. Bake at 350 degrees for 45-55 minutes.
