Ingredients

    Healthy Choice Garlic and Herb Pasta Sauce, 1/2 cup, 6 serving
    Spinach, fresh, 2 cup
    bell pepper, 1 cup sliced
    Carrots, raw, 1 cup, strips or slices
    Onions, raw, 1 large sliced
    Mushrooms, fresh, 1 cup, pieces or slices
    Portabella Mushrooms, 1 cup, slices
    Garlic, 1 clove minced
    Olive Oil, 1 tsp
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Italian seasonings, 1 tsp

Directions

Heat large fry pan. Add 1 tsp olive oil and sweat the onion slices. When they begin to caramelize (5-6 minutes), add garlic. Saute for a minute, add carrots and peppers. Cook for another few minutes and add mushrooms. Cook until mushrooms release their liquid, then stir in spinach and seasonings. Cover, turn off heat and let rest on burner for 5 minutes. Uncover and stir. Serve over your choice of pasta or over salad for low carb. (Not included in nutrition count.) At table, I pass red pepper flakes so folks can add more spice if they like.
