Number of Servings: 1

Ingredients

    1/4 cup of Flax meal
    1/4 cup of Eggbeaters
    1/2 tsp of baking powder
    1 or 2 tsps of cinnamon
    1/2 tsp of I cant believe it's not butter
    2 packets of sugar substitute equal or splenda

Directions

Mix all the dry ingredients in a cup
Add egg and butter. Mix well
Pop into the microwave for 1 minute
Slide the muffin out of the cup and enjoy a "bread" treat.
(Add raisins to make this even more delicious)

    Very good! I added some frozen blueberries. Only adjustement was that mine took a little longer (1.5 min) to cook. - 5/30/09
