Ingredients

2 Tbsp Olive Oil
1 Onion, chopped
3 Tbsp chopped garlic (about 1 bulb)
2 cups chopped mushrooms
2 lbs lean ground beef (I used 9% in the nutrition calculation)
1 Tbsp dried parsley
1 tsp paprika
2 tsp dry mustard
2 tsp salt
1 tsp worcestershire sauce
1/2 cup whole wheat flour
3 cups chicken or beef broth
2 cups lowfat plain yogurt
Directions
Chop onions, garlic, and mushrooms and saute in ollive oil. Add ground beef and spices and cook until meat is done.
Add flour and stir until you can't see it anymore. saute for about a minute and then add broth, stirring until thickened. Add yogurt and stir until smooth. Let simmer, stirring occasionally while you cook whole-grain egg noodles.
Serve over noodles with something colorful like my sweet potato salad.
Makes about 10 servings of 1 cup each. Can easily be halved for smaller families.
