Introduction

This is a light salad. I love to substitue chicken for shrimp to change it up. Add raisens or more curry powder depending on your taste! I've even put some bell pepers (not the green) - talk about a satisfying salad! The calories may seem high so split the salad if you want.... This is a light salad. Ingredients

    3 Oz. frozen uncooked shrimp, thawed under running water for 5 min.
    1 tsp olive oil
    3/4 cup water
    1/2 cup quinoa
    1/4 tsp curry powder
    1 tbsp dried cranberries
    1 cup chopper cucumbers
    2 scallions, chopped
    sat and pepper to taste

Directions

Toss shrimp with oil. Grill for 6 to 8 minutes, flipping once.
Bring water and quinoa to a boil, cover, and simmer for 15 minutes.
Stir in curry, cranberries, cucumbers and scallions. Top with shrimp.
Salt and pepper to taste.
