Ingredients

2 eggs
1 stalk of asparagus
1 onion slice
1/2 cup spinach
1 oz low-fat cheddar cheese
1 tsp of olive oil or spray
Directions
Dice the asparagus and onion, and cook those in the olive oil until just soft, add the spinach and cook until wilted. Put these aside.
Beat the eggs and pour into a small frying pan. Let cook for a while, then add the veggies and cheese to half the egg.
Fold the egg over omelet style, and cook both sides until egg is fully cooked.
