Introduction

This is a very simple and quick to throw together soup. It is on the high side for sodium, but otherwise loaded with nutrients and delicious. Ingredients

    1 Tbsp Extra Virgin Olive Oil
    1/2 C Onions, chopped
    1 1/2 C Carrots, chopped
    3 C Kale, chopped
    1 C Del Monte Petite Cut Diced Tomatoes
    Progresso beef broth 100% Natural
    1/4 C (2oz) V8 Veg. Juice, Low Sodium
    3.5 C (15.5oz can) Bush's Canellini Beans

Directions

Sautee onion, carrot, and kale in olive oil over med. heat until onion is translucent and kale wilts, but is still bright green. Add the diced tomatoes and about an inch of broth and the V8 juice. Simmer about 5 minutes. Add remaining broth and bring to boil over med.- high heat. Add rinsed and drained beans for 1 minute then remove from heat. Serve. Makes apprx. 8 - 1 cup servings.

**This is very basic...the addition of many kinds of seasonings or herbs would be wonderful.
