Ingredients

    1 can Pumpkin
    1 graham cracker pie crust
    1 12 oz cool whip lite
    1 box (8 oz) Jello sugar free/fat free instant pudding mix
    Splenda packets (about 3 teaspoons worth - more if you like it sweeter)

Directions

Make the instant pudding using 1-2% milk. Take the pumpkin and mix in the splenda. Mix half of the pudding with the pumpkin and layer the other half on the bottom of the pie crust. Add the pumpkin/pudding mix on top of the pudding layer. Top with the cool whip. Makes about 8 slices of pie.....

    one serving of this has more carbs in it than I am supposed to have in a single meal, so if you are diabetic, you may want to eat just half a serving. - 12/31/09
