Introduction

Taken from Epicurious. I love the flavor of 5 spice seasoning and this is going to be my Easter chicken! The recipe says to use a cut up chicken but I'm going to roast it whole on a rotisserie with the onion stuffed inside. Also, rub some seasoning on the inside of the chicken for extra flavor. The best 5 spice powder I've found is an Asian blend in a pouch at an Asian food store. The brand name is Lobo. It's sodium and sugar free and only .85 cents a pack with enough for at least 50 uses! Ingredients

    4 cloves garlic, pressed
    1/2 tsp coarse Kosher salt
    1 tsp Chinese 5 spice powder*
    1 cut up chicken(3&1/2 lbs, cut into 8 pieces)
    1 large onion, peeled and cut into 16 wedges

Directions

Combine garlic, salt, olive oil and Chinese 5 spice powder in a large bowl. Add chicken pieces; turn to coat. Cover and chill at least 1 hour or overnight Preheat oven to 425°F. Arrange onion wedges in 13x9x2 inch roasting pan.

Arrange chicken skin side up, atop onions. Roast until chicken is cooked through, basting occasionally with pan juices, about 50 minutes. Remove chicken from oven and let rest 10 minutes. Arrange chicken and onions on platter and serve.

Serves 8(1 piece of chicken per serving)

*To make your own 5 spice powder: 1/8 tsp ground fennel seeds, 1/8 tsp Szechuan peppercorns; 1/8 tsp ground cinnamon, 1/8 tsp star anise; and 1/8 tsp ground cloves=1 tsp 5 spice powder.
