Introduction

Ingredients

    1 Bunch Fresh Spinach
    3 oz Barilla Plus Penne Pasta
    .5 cup diced tomato
    Fresh Basil
    2 tbsp Low Fat Sour Cream
    .25 cup Dry White Wine
    1 fillet Salmon
    Nutmeg

Directions

Cook pasta according to the box. While pasta is cooking, sautee garlic with a spray of pam in a skillet for 1 minute. Put spinach in the pan, add wine and sautee until spinach is tender, about 4 minutes. Put sour cream and a sprinke of nutmeg in the pan, let melt then move contents into a food processor. Puree mixture and toss with cooked pasta. Add tomatoes and keep on low until samon is ready. To prepare salmon, spray pan with pam and sautee the salmon for about 5 minutes on each side. Salt and pepper and add to pasta.

    I like the concept, what I made turned out OK for DH and me, but kids didn't like it. Also, the ingredient list and ingredients in the directions didn't match. Exact measurements/weights of spinach, basil & garlic would have helped. I ended up with too much spinach sauce for the fish & tomatoes. - 4/9/09
