Introduction

Less fat and calories than a traditional Macaroni salad. I use pasta shells instead of Macaroni to make more servings. Great for family gatherings or a picnick. I use a food processor to chop up all the veggies to save time. I refregerate over night to let the liquid absorb and it tastes better. Less fat and calories than a traditional Macaroni salad. Ingredients

    8 ounces of pasta shells dry
    16 ounces (1 can) of sweetened condensed milk
    1/2 C kraft fat free mayo
    1/4 C of white vinager
    1/2 C of splenda
    1/2 C of frozen peas thawed
    1/2 C of chopped onions
    1/2 C chopped bell pepper
    1/2 C Celery chopped
    1/2 C carrots chopped
    2 ounces of skim mozz cheese diced into small cubes


Directions


1.Bring a large pot of water to a rapid boil and cook pasta according to the package. After cooking, drain and rinse with cold water.
2. Meanwhile prepare veggies and cut up cheese. I use a food processor to save time.
3.Mix together all the veggies in a large bowl.
4. Add sweetend condensed milk, fat free mayo, splenda, and vinager, Toss in pasta shells and Mix well
5 Refrigerate at least 4 hours stirring occasionally. Best if refrgerated over night.

Makes 12 servings about a 1/3 cup each.
