Ingredients

    1 cup whole wheat flour
    2 TBSP Splenda, (or sugar)
    2 tsp baking powder
    1/2 tsp salt
    1/2 cup egg beaters (or 1 egg)
    1 cup skim milk
    2 TBSP olive oil

Directions

Blend lightly, there will be a few lumps (makes the cakes lighter, don't over-beat) Cook until bubbles appear at edges and appear a little dry. flip and cook the other side. Delicous!

  • Very yummy! Although it only made 6 pancakes for me. I couldn't imagin stretching it to make 18, they'd be the size of a quarter! It used one TBSP of olive oil and 1 TBSP of trivia and 1 TBSP of sugar. Next time I'll skip the evoo for less cal. These were a 120 each the way I made them. - 1/18/12

  • It was a quick easy recipe. I also added 1/2 cup of blueberries. That is what I really wanted, Blueberry Pancakes. Good and tasty. - 11/11/10

  • They were really good, even my 2 yr old daughter loved them. Mine must have been bigger, because it made only about half of what the recipe called for. - 4/18/07
