Number of Servings: 4

Ingredients

    2 cups bite-sized cauliflower florets, halved
    2 cups halved Brussels sprouts
    2 medium carrots, cut into sticks
    1 medium yam or sweet potato (1/2 lb.), diced
    Olive oil spray
    1 Tbsp. chopped fresh rosemary
    2 Tbsp. chopped fresh parsley
    2 tsp. lemon juice

    Optional -- 2 tsp. fresh thyme (not in nutritional info)

Directions

Preheat oven to 450. Mix ingredients minus lemon juice in a bowl, season with salt and pepper if desired. Spray liberally with olive oil spray. Scatter vegetables evenly on baking sheet, roast 20 minutes, turning 2 or 3 times w/ spatula. Increase oven temperature to 500 degrees and roast 10 minutes more until tender. Remove, add a little oil if wanted, and add lemon juice.
