Introduction

Ingredients

2 Baking Potatoes (I like Yukon Gold) or 5-6 Baby potatoes (I still like Yukon Gold)
4 oz. Smoked Salmon (lox)
1/2 c. Plain lowfat Yogurt
2 tbsp. Fresh Chives
1 tbs. Smart Balance Buttery Spread
4 dashes Salt
Directions
Preheat oven to 400 Degrees
Cut large potatoes into slices to make rounds approx. 1/2 inch thick. (If using baby potatoes, cut in half).
Add potatoes to baking dish, add Smart balanceand rub together until all pieces are covered.
Lay potato slices out flat so that they are not overlapping.
Sprinkle with salt.
Bake for approx. 10 minutes and test for done-ness with a small knife to see if the knife slips in easily (no resistance). Cook a couple more minutes as needed.
Remove from oven, slice salmon into small pieces and place over each potato slice. Return to oven under broil for approx. 30 seconds.
Remove potato slices with metal spatula to keep shape. Transfer to serving plate in single layer, top with small dollop of yogurt and sprinkle with chives. Serve immediately.
