Ingredients

    4 eggs
    8 oz. liquid egg whites
    1/4 cup brown sugar
    1 Tbsp. whey protein powder
    1/2 cup unsweetened applesauce
    1/2 cup quick cook quaker oats
    1 tsp vanilla
    1 1/2 tsp lemon extract
    1 cup soy flour
    2 tsp almond oil
    1 Tbsp ground flaxseed
    1 tsp poppyseeds
    1/4 cup sugar
    1/2 cup nonfat dry milk
    1/4 cup lemon juice
    1 tsp baking powder
    1/2 tsp baking soda
    2 Tbsp sugar to sprinkle on top

Directions

Beat eggs and mix wet ingredients, add dry (except regular sugar) pour into 24 muffin tins.(about 1/4 cup batter each) sprinkle top with pinch sugar for a little crunch Bake at 350 degrees for 20 min.
