This is my grandmother's slow cooker recipe. It takes a LONG time, but is so worth it. This is my grandmother's slow cooker recipe. It takes a LONG time, but is so worth it.
Number of Servings: 8


    3lbs. Chuck Roast
    2 C. Tomato Sauce
    2 links Chorizo sausage, sliced
    1 large green bell pepper, chopped
    2 small yellow onions, chopped
    4 cloves garlic, chopped fine or pressed
    1 Tbsp. Olive oil
    4 bay leaves, whole


Cook roast in slow cooker until it can be easily shredded (about 6-8 hours depending on your cooker). Shred the meat and put back in the cooker (do not drain). Add tomato sauce, chorizo, and bay leaves. Saute the bell pepper, onions, and garlic in the olive oil until softened. Add to the cooker. Stir, then allow to cook for another couple hours (the longer it cooks, the better it tastes). Salt and pepper to taste. Serve over rice.
