Ingredients

    For 2 servings:

    1/2 cup dry brown rice
    2 cloves garlic
    1/2 onion
    1 red bell pepper
    1 tbsp olive oil
    1 can black beans
    1/2 tsp cumin (not included in nutritional info)
    1/4 tsp oregano
    1/2 tsp pepper
    1 tomato
    salt to taste (not included in nutritional info)

    Add cheese and sour cream (not included in nutritional info) for an extra treat!

Directions

1. Cook rice, the beans take about 10-15 minutes to cook so time the rice accordingly (this is why the cooking time is so long).
2. Mince garlic, chop onion and bell pepper.
3. Add olive oil to pan and saute garlic, onion, and pepper until tender.
4. Chop tomato and drain/rince beans while veggies are cooking.
4. Add beans, tomato, cumin, oregano, pepper, and water (if needed to prevent sticking).
5. Cook until beans are warmed through and tomatoes are softened.
6. Serve over rice.

Makes 2 servings.
