Introduction

Number of Servings: 1

Ingredients

    *Smart Balance Buttery Spread, 1 tbsp (divided into 1/2 Tbsp.)
    Garlic, 1 clove, minced
    *Balsamic Vinegar, 1 tbsp
    Chicken Breast, no skin, 2 ounces, diced
    Whole Wheat Spaghetti, cooked (pasta), .5 cup
    Milk, nonfat, 1 oz.
    Parmesan Cheese, grated, 1.5 tbsp

Directions

Saute chicken in 1/2 Tbsp. Smart Balance spread, minced garlic, and balsamic vinegar; until done and no longer pink. Prepare pasta according to pkg. directions. Meanwhile, in microwave- melt remaining 1/2 Tbsp. Smart Balance spread. Add Parmesan and milk to the spread, and stir until thickened. Toss cheese mixture with chicken and pasta and serve. Makes 1 serving.

    Very Good
    Tasted excellent! The only thing is the sauce was very runny. I would just add a few drops of milk at a time until its a semi-thick sauce. I double the recipe for myself as a dinner. Great meal! - 2/18/11
