Ingredients

-Beans, Pintos (1.5 cups)
-Green Bell Peppers (3 whole, pitted and without seeds)
-Brown Rice (2 cups)
-Chicken breast (8 ounces or 1 cup, skin removed)
-Garlic (diced, one clove)
-Salt (to taste)
-Pepper(to taste)
-Onion powder (optional)
Directions
Chop up chicken and bell peppers into bit-sized pieces (make sure you cut out the middle of the bell peppers and all of the seeds). Sautee' chicken, bell peppers, garlic and seasonings for approximately 15 minutes or until chicken is fully cooked.
Prepare beans seperately, as specified on packaging (it varies if you buy canned beans versus beans in a bag - the cooking time for canned is approximately 10 minutes on a stove while the cooking time for bagged beans can be up to 2 hours after soaking the beans. The flavor of the bagged beans, however, is much fresher.) Make sure there is still about 2 cups of liquid in the bean mixture after beans are done cooking.
Prepare brown rice as directed on packaging.
Mix all cooked ingredients together in a large pot and simmer for approximately 10 minutes to bring all the flavors together. Eat and enjoy!
