Introduction
My version of Pasta Carbonara with Shrimp and grape or cheery tomatoes added My version of Pasta Carbonara with Shrimp and grape or cheery tomatoes addedNumber of Servings: 4
Ingredients

4 oz. pasta
6 oz. cooked shrimp, Frozen, thawed or fresh that is devined and tail removed
1 egg, lightly beaten
1/2 Cup Parmesan Cheese, grated
24 grape tomatoes (or desired amount)
Directions
Serves 4
Boil pasta till al dente. While it is boiling brown bacon until crisp in a heavy or cast iron pan. Remove to paper towel and blot grease. If there is a lot of grease in the pan remove it. Add shrimp and tomatoes to warm through (if you like the tomatoes more like sauce smash them as they warm to allow juices to flow. Drain pasta, reserving 2 - 4 T of the liquid and return to pot. Crumble bacon into pot then add shrimp mixture to pasta, add egg and Parmesan Cheese. Gently toss to mix all ingredients. If needed add reserved liquid and toss to incorporate. Serve with a salad/dinner roll.
