Introduction

Ingredients

    1lb of Ground Beef
    1 cup of low fat shredded cheese (colby or cheddar)
    4 cups of Uncle Ben's Instant Brown Rice

    Sauce:
    1 cup of ketchup
    1/2 cup of brown sugar (unpacked)
    1/2 cup of water
    2 tbsp of margarine
    2 tbsp low sodium soy sauce
    2 tbsp balsamic vinegar
    2 tbsp Worcestershire sauce
    1 tsp Chili Powder
    1 tsp Garlic Powder
    1 tsp Ground Oregano

Directions

Brown the ground beef in a skillet and drain.

At the same time, prepare the rice as directed.

In a large mixing bowl combine all the ingredients for the sauce.

Slowly stir in cooked rice until it's well coated. Stir in beef and 1 cup of cheese until the whole mix looks uniform.

Scoop mix into a casserole pan and top with rest of shredded cheese. Cover pan with aluminum foil (to prevent cheese from burning).

Bake at 350 for approximately 15-20 minutes, or until the cheese is nice and melty.

Makes approximately eight 1.5 cup servings.


Tips:

Play with the seasonings. It's really hard to screw this up if you use moderation.

Can substitute macaroni instead of rice, but it will change the nutritional content obviously.

Left overs keep well in the fridge for a few days if you put them in ziploc bags or containers.

    Very Good
    Hubby and I found to be very good...only down side was only 3/6 kids loved it...will make it a few more times though to see if the kids aquire a taste for it. I think they were expecting it to taste like something else I make that looks similar unfortunatly ;( - 7/24/09

    made one substitution, used venison instead of beef. Dellicious! This will be added to my "comfort foods". My SO loved it as well. With a salad, the portion was just right. - 4/23/09
