Low fat....great taste.....
You can also modify this, I do NOT use the splenda at all and I use a 40g box of raisins in place of the blueberries on occasion.

Ingredients

    1 cup skim milk
    1 1/2 cup of Kellogg's all bran cereal
    2 tbsp of vinegar

    Mix and let it sit for 5 minutes, then add

    1 sugar free apple sauce pre packaged
    1 overly ripe banana
    3 tspn of cinnamon
    1tsp bp
    1 tsp bs
    6 tbsp of egg white
    1 cup of splenda NO calorie sweetener
    1/4 cup of blueberries
    1 cup of flour

    Makes12

Directions

Mix the first 3 ingredients, let sit for 5 minutes,
Stir then add the other ingredients in the order that you see them, the flour last.

Butter flavor spray.... muffin tin

Fill the tray, bake for 14 minutes and let cool, these freeze wonderful and I make them so that I can eat 2 a day. If you go with no blueberries you can add a tsp of low sugar jam on a warm muffin...They are great!!!
